Heat 1 tablespoon oil in skillet over med-high + sauté 1 package of pepper mix with salt/pep 4-5 min or until soft + starting to brown

Meanwhile pat 1 package of steaks dry + thinly slice

Assemble quesadillas using 6 tortillas, dividing 1 package of cheese, sliced steak + cooked veggies evenly among them

Cook quesadillas in lightly oiled skillet over med heat, 2-3 min per side until cheese is melted

Cut quesadillas into halves + divide between plates
