Cook time: 10 minutes
Remove bay leaf from pork, then chop into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp
Add 2 salad kits to a large bowl, drizzle with dressing + toss to combine
Divide salad between plates, top with pork + dollop on 1 container of guacamole to each—wow, looks tasty!
