Instructions
Cook time: 17 minutes
Heat skillet over med-high; remove bay leaf from pork, then chop into 2-inch chunks; add to skillet + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp; set aside
Heat 2 tbsp oil in a 12-inch skillet or large pot over med-high + cook 2 bags of Superblend with salt/pep for 5-7 min until tender, stirring minimally to ensure browning
Stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 30 sec or until warm + soft
Add pork + veggies to tortillas (or serve veggies on the side!), dollop on avocado spread, then fold—enjoy!
