In a measuring cup or bowl, whisk 6 tbsp eggs, ¼ cup cheese + salt/pep
Boil a large pot of salted water, add half the box of pasta + cook 4-6 min or until al dente; reserve 1 cup pasta water, then drain + return to pot
Meanwhile, heat skillet over medium; add ½ pack bacon + cook, flipping frequently, until browned + cooked through, 4-6 min; crumble into bite-size pieces + remove from heat
Add hot pasta, eggs + 2-4 tbsp pasta water to bacon skillet; stir continuously until sauce is creamy; divide pasta to bowls + garnish with salt/pep + 2 tbsp cheese to each
