Instructions
Cook time: 29 minutes
Preheat oven to 425°; pat carrots dry, mix with 1 tbsp oil + salt/pep; add to sheet pan + roast 15 minutes; flip + roast 10-15 min more til tender + browned
Meanwhile, heat 1 tsp oil in skillet over high; add half of beef to pan, break into large chunks + sear undisturbed 2 min; flip, season generously with salt/pep + fave spices, then break into small pieces; cook 2-3 min til fully cooked + no pinkness remains
Tear corner of rice to vent + heat in microwave 90 sec; divide to bowls
Top bowls with carrots, beef + 2-3 tbsp sauce to each; garnish bowls with chopped scallions
