Place 1½ packages of mahi mahi fillets in a baking dish + coat with 6 tbsp sweet teriyaki; marinate 15 min

Drain + discard excess marinade; season mahi mahi generously with salt/pep; heat 1½ tbsp oil in skillet over med-high + sear fish 3-4 min one side, then flip + cook 1-2 min more until fish is cooked through + flakes easily with a fork

Meanwhile, dice ¾ of a package of fresh cut pineapple + add to a bowl with pineapple liquid; wash 1½ packages of organic red bell pepper, cut off stem + discard seeds, then cut into bite-size pieces; mix in peppers, chopped 1½ packages of fresh cilantro, 1½ tbsp oil + salt/pep to pineapple

Divide fish to plates, top with pineapple salsa + 2-3 tbsp sweet teriyaki to each
