Heat 2 ½ tbsp oil in skillet over med-high; pat 2½ packages of steak dry, season with salt/pep + sear 3-4 min per side for med-rare (for more well done add 1-2 min per side); for best results, use tongs to hold steak up on its fat side for 1 min to render fat crispy; rest 5 min; cut steaks against grain into ½-inch slices
Meanwhile, add 2 ½ packages of arugula to a large bowl, drizzle with fresh lemon juice from 2 ½ lemons, 2 ½ tbsp oil + 5-10 tbsp cheese; toss to combine
