Instructions
Cook time: 22 minutes
Clean 2 packages of mushrooms with a damp paper towel, then thinly slice; heat 2 tbsp oil in a large skillet or pot over high, add mushrooms + cook undisturbed 3 min; sauté 5-7 min until browned + tender, season with salt/pep + set aside
Peel + dice shallots, add to skillet on med heat with 1 tbsp oil, cook 2-3 min; add half the spinach with salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted
Heat a large skillet over med-high heat, pour 2 packages of chicken + juice into pan, break up chicken with wooden spoon, heat 2 min, flip + cook 2-3 min more until warmed + browned
Divide spinach between bowls, top with mushrooms, chicken + 2-3 dollops of sauce—yum!
