Chef’s note: Make sure to have these pantry staples on hand: sugar
Heat ¼ cup sugar, half of cucumber watermelon juice + 2 juiced limes to a small saucepan; heat over med until sugar is dissolved, 1-2 min; stir in remaining COLD watermelon juice + pour all into a shallow freezer-safe dish
Freeze granita for 4 hours, scraping every 30-60 min with a fork until slushy + crunchy; chop chocolate into chocolate chip size pieces; stir chocolate into granita before serving
