Wash 1½ packages of scallions, thinly slice crosswise + discard roots; using a fork, gently break apart 1½ packages of tuna, add to bowl with scallions + 3-6 tbsp dressing; mix to combine

Toast 3 croissants until warm + golden; divide tuna between croissants + top with a handful of arugula

Tip: enjoy remaining arugula as a side salad with oil, vinegar, salt + pep
