Instructions
Cook time: 9 minutes
Heat 2 tsp oil in skillet over med/high; pat 4 steaks dry, season with salt/pep + sear undisturbed 2-3 min; flip + cook 2-3 min more for med-rare (for more well done add 1-2 min per side), repeat with remaining steaks; rest steaks 5 min on cutting board; cut steaks against grain into ½-inch slices
Meanwhile, cut onion in half from root to stem + peel; finely dice onion + put in small bowl; wash + dry 2 parsley; remove stems, roughly chop + add to bowl; slice 2 limes + juice into bowl; add 3-4 tbsp oil + salt/pep
Microwave 2 packages of beans in a covered, microwave-safe bowl 2-3 min
Heat skillet over med-high + add 2 packages of rice with 1 tbsp water; stir occasionally for 2 min til warm
Divide rice, steaks + beans between plates + top steaks with salsa verde
