Instructions
Cook time: 17 minutes
Preheat oven to 425°F; chop broccoli in 1-inch pieces + add to bowl with 3 tbsp hummus, 1 tbsp olive oil + salt/pep, then toss to combine; spread on sheet pan + bake 10 min
Remove pan from oven, push broccoli to one half of pan, spread rice onto empty part of pan + drizzle with 1 tbsp water; return to oven for 5 min or until rice is warm
Meanwhile, heat 1 tbsp oil in skillet over med-high + pat chicken dry, season with salt/pep; cook chicken 4-6 min each side until fully cooked, no pinkness remains + internal temp is 165°
Add all to plates + dollop on extra hummus if desired
