Instructions
Cook time: 12 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Heat lightly oiled skillet over med-high, pat chicken dry, add to pan in one layer + sear 2 min; flip + cook 2-3 min more until cooked through; season with salt/pep + half the seasoning blend
Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep, 4-5 min or until soft + starting to brown
Toast 2 pitas until warm + golden; slice pitas in half; add veggies + meat; mash avocado in a small bowl with salt/pep + lime juice; dollop on top of each pita sandwich
