Cook time: 10 minutes
Heat 1 tbsp oil in skillet over med-high; pat shrimp dry, season with salt/pep + sauté 3-4 min until shrimp is pink, opaque + cooked through; turn off heat + drizzle with fresh lime juice + set aside
Wash + dry cilantro, remove stems + roughly chop leaves; toss shrimp with cilantro
Heat skillet over med-high + add rice with 1 tbsp water; stir occasionally for 2 min until warm; divide to plates
Top rice with cilantro-lime shrimp
