Cook time: 22 minutes
Cut onion in half from root to stem, peel + thinly slice; heat 1 tsp oil in skillet over medium + cook onions, stirring frequently, 8-10 min until browned; season with salt/pep + add ¼ cup water; cover + cook 3-5 min until softened; set aside
Heat 1 tbsp oil in a skillet over medium; sauté 2 packages of chorizo 5-7 min until browned + hot; combine with onions
Divide 1 cup hummus to 4 bowls + spread, flattening slightly, into a circle in the center of each bowl; toss rainbow veggies with chorizo + onions then add to bowls on top of hummus—dig in!
