Instructions
Cook time: 27 minutes
Preheat oven to 400°; mix 1½ packages of potatoes with 3 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan; roast 20-25 min until tender
Spread 3 packages of broccoli on second sheet pan; drizzle on 3 tbsp oil, salt/pep + bake 10-12 min or until browned + tender; dollop 2-4 tbsp hummus into each bowl +spread, flattening slightly, onto the side of the bowl
Heat lightly oiled skillet over medium + season 2 packages of burgers with salt/pep; cook burgers 5 min on one side, then flip over + cook 2-3 min more until browned + cooked through; cut into bite-size pieces
Divide veggies to bowls, top with burger pieces
