Instructions
Cook time: 22 minutes
Preheat oven to 450° F; remove chicken from all packaging, including paper, add chicken with juices (if desired) to a baking dish; bake 20 min until hot + skin is golden brown
Meanwhile, microwave potato on high 6-8 min (caution, that's a hot potato!); carefully cut in half, then set aside
Heat 1 tbsp oil in skillet over med-high; add asparagus, salt/pep + sauté 5 min; reduce heat to medium, add 2 tbsp water, cover + steam 2 min or until bright green + tender; set aside
Add everything to plates, dollop on 1-2 tbsp sour cream per potato + enjoy!
