Instructions
Cook time: 7 minutes
Break up ½ the pork into bite-size pieces (save remaining for lunch tomorrow); heat a skillet over med-high + sear pieces 3-4 min turning half way through until meat is crisped and hot; set aside
Thinly slice half of red onion
In batches, heat 4 tortillas in skillet over med-high, 30 sec or until warm
Divide pork to tortillas, top each with 1-2 tbsp cheese, onion + a squeeze of lime
