Cook time: 15 minutes
In a medium pot, bring 1¼ cup of water to boil, add a pinch of salt, 1 tbsp of oil + stir in the couscous; turn off heat, cover + let stand 5 min; zest lime + add to couscous then fluff with fork
Meanwhile, add half of the turkey into a bowl; mix with ½ of seasoning packet, minced shallot + 2 tbsp tzatziki; form into 1-inch balls; heat 2 tbsp oil in skillet over high; add meatballs + cook 4-6 min, turning occasionally, until fully cooked; divide to bowls
Tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!)
Divide couscous + kofta meatballs to plates then dollop each with 3 tbsp tzatziki; serve with a wedge of lime
