Instructions
Cook time: 22 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Preheat oven to 400°; drain chicken + break up or shred into bite-size pieces; set sauce pouch aside
Add ¼ of the chicken + 2 tbsp cheese to 1 tortilla; roll up burrito style (making sure there are no open edges) then place seam-side down on a lightly oiled sheet tray; repeat with 3 more tortillas
Bake chimichangas 15-18 min until golden brown + hot (watch for them to puff up!)
Serve chimichangas with chopped avocado + cilantro lime sauce drizzled on top—nice job!
