The perfect “cheater’s risotto” - mineral-rich, whole-grain, and done in a fraction of the time. Includes our Carrot Rice, our Spinach Artichoke Chickpea Dip and our Lemon Artichoke Quinoa Cup. 

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Carrot Rice with a generous pinch of salt and pepper for 3 minutes until starting to soften, then lower heat to medium
MIX IN
1/2 container Spinach Artichoke Chickpea Dip, contents from 1 Lemon Artichoke Quinoa Cup + 1 cup water, stir thoroughly, cover, turn heat to medium and cook for 4 minutes until carrots are tender and sauce is creamy
