PRE-HEAT
oven to 425°F and mix 1 bag Shaved Brussels with 1-2 tbsp olive oil, a generous pinch of salt and pepper, then spread on a baking sheet
BAKE
for 10-12 minutes until browned and crispy, then top with 4 tbsp Cashew Cheddar and bake for an additional 4 minutes until cheddar is bubbling
FINISH
with 1 container Cucumber Corn Black Bean Salad
