THE DISH

Thick and creamy, with a subtle sweetness, this soup makes a great side dish or appetizer. Includes our Butternut Squash French Fries and our organic Coconut Curry.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Butternut Squash French Fries for 2 minutes, then add 1 cup of water and a generous pinch of salt and pepper, cover and cook an additional 5 minutes or until tender, stirring occasionally
MIX
in a blender or food processor, add 4 tbsp Coconut Curry and blend until completely puréed, adding additional water as needed to thin the soup out
FINISH
with salt/pepper to taste
