A hearty lentil medley served on a bed of curried mashed carrots, this lightened up, deconstructed spin on Shepherd’s Pie is perfect for a special date night meal or an elegant touch to your nightly dinner routine. Includes our Carrot Chips, our Coconut Curry and our Cruncy Carrot Lentil Mix. 

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Carrot Chips for 2 minutes, then add 1/3 cup water + salt/pepper, cover and cook for an additional 7-9 minutes until carrots are tender
MIX
cooked carrots in a blender or food processor with 4 tbsp of the Coconut Curry and blend until puréed, then move to a bowl or plate
FINISH
by topping with 1 container Crunchy Carrot Lentil Mix
