THE DISH

A silky and aromatic Thai curry served over a bed of cauliflower rice makes for a lightened up alternative to your favorite Thai takeout curry. Includes our Cauliflower Rice and our Thai Coconut Vegetable Curry.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Cauliflower Rice with a pinch of salt/pepper for 3-5 minutes until tender
MIX IN
1 container Thai Coconut Vegetable Curry and cook for 2-3 minutes until curry is combined with cauliflower and warmed through

Many of the ingredients in Thai curry paste--such as turmeric, chili peppers and ginger--have medicinal and anti-inflammatory properties.
