Heat 1 tbsp oil in skillet over med-high, slice tofu nuggets in half + heat 1-2 min until warm + browned
In a small bowl, whisk juice from ½ lime, 2 tsp oil + salt/pep
Thinly slice 2 cucumbers; wash + dry lettuce leaves, tear into bite size peices, add large bowl with cucumbers, sliced scallions, tofu nuggets + lime dressing; toss to combine + divide to bowls
