Cook time: 26 minutes
Preheat oven to 425°; cut half bag potatoes into ¼-inch pieces
Place 1 large piece of foil on a sheet pan + oil the foil; add potatoes, salt/pep, 1 tbsp oil + seasoning packet; bring the long edges of foil together + roll to seal, leaving 1-inch of space above ingredients; repeat with side ends of foil—your pack is sealed!; bake 23-25 min
Meanwhile, heat 1 tsp oil in skillet over med/high; pat both steaks dry, season with salt/pep + sear undisturbed 2-3 min; flip + cook an additional 2-3 min for med-rare (for more well done add 1-2 min per side); rest steaks 5 min on cutting board before serving
