Heat lightly oiled skillet over med-high, pat dry 2 packages of beef, add to pan in one layer + sear 2 min (for well done add 1 min); flip + cook 1 more min, season with salt/pep; set aside

Heat 1 tbsp oil in a large skillet over med-high + sauté 2 packages of pepper mix with salt/pep 4-5 min or until soft + starting to brown

Stack 8 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft

Divide beef, veggies + salsa between tortillas then roll up—time to eat!
