Description

This is some of the greatest produce autumn has to offer. Sweet potato, gala apples, red onion, fresh thyme, and parsley make for a colorful and super-hearty blend. Plus, they're chopped and ready to roast—all you need is a pan and a hot oven.

Instructions

Cook time: 28 minutes

Preheat oven to 400° and set herbs aside. Mix roasting veggies with 1 tbsp oil, salt, and pepper. Place on a sheet pan and roast for 15 minutes, then flip veggies over, add herbs, and roast for 10-15 minutes more until tender and browned.
