These petite potatoes cook up quick—just pop them in the microwave for 5 minutes til they're cooked through and steamy. Plus, their thin red skin is loaded with fiber, vitamin B and potassium, making them an extra nutritious (and tasty) source of carbs.

Preheat oven to 400°. Slice potatoes into quarters. Add potatoes to a sheet pan, drizzle with 2 tbsp oil, salt, pepper, and favorite spices (we like garlic powder). Toss to coat evenly, then spread onto the sheet pan cut-side down. Roast for 20-25 minutes until tender and browned.
