Instructions
Cook time: 30 minutes
Preheat air fryer to 350°; cut stem end off of onion then peel off skin; place onion cut side down + with a sharp knife, cut thru onion every ¼-inches w/o going thru root end; flip onion + carefully separate "petals"
In a bowl, whisk ½ cup pancake mix, 1 tsp salt + seasoning packet; in a second bowl, whisk ¼ cup eggs, 1 tbsp oil + 2 tbsp water
Add onion to pancake mix + toss to coat, separating petals; shake off excess; add onion to egg bowl + coat, separating petals; shake off excess; repeat in pancake mix
Generously spray or brush onion with oil; air fry 10 min, spray with oil + cook 10 min til crispy; serve with sauce for dipping—looks good!
