Instructions
Cook time: 30 minutes
Add cold water + 2 tbsp vinegar to a bowl; peel potatoes, use a box grater to shred potatoes, soak 10-20 min; drain + use a towel to squeeze out all moisture
Preheat oven to 400; line a sheet pan with parchment + lay bacon flat in a single layer on the pan; bake 17-22 min flipping halfway through
Grate 1/4 onion into potatoes; heat 2 tbsp oil in a large skillet over med, add potatoes in a single layer, cook undisturbed 5-7 min til bottom crisps, flip + cook 5-7 min
Mix 1 cup pancake mix, 1 cup water + 1 tbsp oil in a bowl; heat 1 tbsp oil in skillet over med + scoop ¼ cup of batter into pan per pancake, add a few blueberries, cook 2 min per side, repeat remaining batter
Heat 1 tbsp oil in skillet over med-low + pour in ½ container eggs + salt/pep, then cook undisturbed until eggs around edges begin to set, about 1 min; continue cooking, using a spoon to stir eggs until curds form + no liquid remains, 1-2 min; remove from pan immediately
