Adapted from the original ATK recipe for Hungryroot.
The original recipe calls for fresh mint. In this recipe, we have substituted fresh parsley. Kofte is made from ground lamb or beef, spices + fresh herbs. This air-fryer version mimics cigar-shaped grilled lamb kofte. The shape lends itself to being wrapped in pita + fits well in an air-fryer. At 400°, kofte cooks quickly, staying tender + juicy, but to ensure even cooking, rotate kofte slightly past halfway point
Whisk ½ cup yogurt, 4 tsp chopped mint (optional), 2 tsp lemon juice, 1 minced garlic clove, ¼ tsp salt + ⅛ tsp pepper
Add 2 tbsp yogurt mixture to a 2nd bowl then break up lamb into small pieces over yogurt + add ⅛ tsp salt + ⅛ tsp pepper; lightly knead until well combined, divide into lightly packed 4 balls + shape into 5-inch cylinders
Preheat air fryer to 400°; space kofte evenly in basket + cook til lightly browned + registers 160°, 10 min, flip + rotate after 7 min
Stir ¼ cup shredded cucumber + salt/pep into yogurt sauce; arrange kofte, sliced tomato, thinly sliced onion + a few pieces of lettuce over 2 pita; dollop each with 2 tbsp tzatziki
