Adapted from the original ATK recipe for Hungryroot. You will need 3 tbsp unsalted butter for this recipe.
Thinly sliced shingled potato is an attractive bed for cod + reduces cook time. Herb butter + lemon slices baste the cod with flavor.
Line air fryer basket with oiled foil
Microwave 1 tbsp unsalted butter, 2 minced garlic cloves, 1 tsp lemon zest, ¼ tsp salt + ⅛ tsp pepper, stirring once, til melted, 30 sec; cut potato into ¼-inch slices + toss in butter; shingle potatoes in basket in 2 layers; air fry 400° til potato is spotty brown + just tender, 16-18 min (rotate halfway)
Combine 2 tbsp unsalted butter, 1 tsp lemon zest + 1 tbsp chopped chives; pat cod dry + season with salt/pep; place fillets on potato slices (tuck thinner ends of fish under to create even pieces); top fillets with butter + lemon slices; air fry til cod flakes + registers 140°, 12-15 min (rotate halfway)
Cut potatoes into 2 portions then divide cod + potatoes to plates
