Pour contents of mashed cauliflower into a microwave-safe dish + cover with a damp paper towel; cook on high 1-2 min until hot + stir until smooth

Meanwhile, heat skillet over med-high, add brats, ¼ cup water + bring to simmer; cover + cook 5-6 min; remove lid, flip + cook 5-6 min more until water evaporates + sausages are browned on all sides; set aside

In the same pan with 2 tsp oil, sauté thinly sliced onion + ½ bag of spinach 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

Divide mash to plates; top with spinach + brats
