Instructions
Cook time: 15 minutes
Boil large pot of salted water, add ½ the bag of couscous + stir; cook 5 min, then drain; add to a large bowl, drizzle with 1 tsp oil + season with salt/pep; divide between bowls
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; add to bowls
Heat a skillet over med-high, pour chicken + juice into pan, break up chicken with wooden spoon, heat 2 min, flip + cook 2-3 more until warmed + browned; add to bowls
Top bowls with 1-2 tbsp tzatziki each
