Cook time: 31 minutes
Preheat oven to 400°; scrub potatoes clean (or peel skin), slice into 12, 1/2 inch thick rounds + lay on a lightly oiled sheet pan; season with salt/pep + bake 20-25 min until tender, flipping halfway through
Heat 1 tbsp oil in skillet over high; add half the meat to pan, break into large chunks + sear undisturbed 3-4 min; flip meat over, then break into small pieces; cook 1-3 min until fully cooked + no pink remains; season generously with salt/pep + fave spices
Stir in ¼-cup sauce to meat; divide sweet potato "buns" between plates, top with meat + a handful of slaw
