Cook time: 14 minutes
Microwave sweet potato in wrapper on high 6-8 min (caution, that's a hot potato!); carefully cut in half, then set aside
Meanwhile, heat lightly oiled skillet over med-high, season burgers with salt/pep + favorite seasoning (we like garlic powder) + cook 3 min per side until crispy; set aside
Heat 1 tbsp oil in skillet over med-high + cook Superblend with salt/pep 5 min until tender, stirring minimally to ensure browning
Add everything to plates, then dollop on 1-2 tbsp hummus per plate—yuuum!
