Instructions
Cook time: 20 minutes
Preheat oven to 400°; heat lightly oiled skillet over med-high, add burgers + break up with wooden spoon; cook with salt/pep + fave spices, 4 min until browned, stirring occasionally; stir in 6 tbsp sauce
Slice 2 zucchinis lengthwise + cut off the stem; scoop out the flesh + mix into filling; place zucchini boats on a sheet pan lined with foil, season with salt/pep + drizzle lightly with oil
Divide Beyond mixture between zucchini halves + top each with 1 slice of vegan cheddar (torn into pieces); bake 10-15 min, or until zucchinis are slightly softened + cheese is melty
Divide to plates + enjoy!
