Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Microwave 2 sweet potatoes in their wrappers on high, 6-8 min, flipping halfway through (caution, that's a hot potato!); carefully cut open
Meanwhile, heat beans in a skillet over med-high or microwave in a covered, microwave-safe bowl, 2-3 min until warm
Wash + dry cilantro, remove stems + roughly chop leaves; divide beans to potatoes then top with avocado + cilantro; drizzle stuffed potatoes with fresh lime juice + salt/pep
