Preheat oven to 400°F; slice half the potatoes in half lengthwise, mix with 1 tbsp oil + salt/pep, then spread on a sheet pan cut side down; roast 25-30 min until tender; mix 2-4 tbsp sauce with potatoes before serving

Meanwhile, heat lightly oiled skillet over medium + season burgers with salt/pep; cook burgers 5 min on one side, then flip over + cook 2-3 min more until browned + cooked through; set aside

Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender

Add all to 2 plates + enjoy!
