Preheat oven to 425°; heat 1 tsp oil in skillet over med-high; pat pork dry, season with salt/pep, blackening seasoning + sear 2-3 min per side; place pork on sheet pan; roast 25-30 min until internal temp is 145°; rest pork on cutting board 5 min

Meanwhile, pat chopped celery dry + mix with 1 tbsp oil + salt/pep; add to a sheet pan + roast 15 minutes; flip chopped celery over + roast 10-15 min more until tender + browned

Heat 1 tsp oil in skillet over med-high + cook pea snaps with salt/pep 3-5 min until tender, stirring occasionally

Slice pork into ½ inch pieces + divide ½ of pork onto plates with veggies (save leftover pork for lunch tomorrow)
