Cook time: 13 minutes
Heat 1 tsp oil in skillet over med/high; pat both steaks dry, season with salt/pep + sear undisturbed 2-3 min; flip + cook an additional 2-3 min for med-rare (for more well done add 1-2 min per side); rest steaks on a cutting board about 5 min before serving
Cut onion in half from root to stem, peel + thinly slice ½ of onion; wash, then slice zucchini into ¼-inch rounds; heat 1 tbsp oil in a 12-inch skillet or large pot over med-high, add onions + zucchini to pan, season with salt/pep + sauté 4-5 min until tender
Divide all to plates + sprinkle steaks with 1-2 tbsp cheese each
