Instructions
Cook time: 32 minutes
Preheat oven to 400°; thinly slice ½ onion + add to a baking dish with 1 container of tomatoes
Cut block of cheese in half (save half for later) + add to the center of the baking dish, drizzle with 2-3 tbsp olive oil, salt/pep + your fave spices
Bake 30 min or until tomato skins start to split + cheese is slightly browned on edges
Meanwhile, boil a large pot of unsalted water + gently loosen fusilli with hands; carefully place in water + boil 2-3 min until al dente, then drain; add cheese + tomatoes to pasta + toss to combine; divide pasta between 2 plates + garnish with roughly chopped parsley
