Instructions
Cook time: 20 minutes
Preheat oven to 400°
Using 4 tortillas, add 1 slice of cheese + 1/4 of the chicken to each tortilla then drizzle each with buffalo sauce; roll up burrito style (making sure there are no open edges) then place seam side down on a lightly oiled sheet tray
Bake chimichangas 15-18 min until golden brown + hot (watch for them to puff up!)
Meanwhile wash + thinly slice romaine
Divide romaine between 2 plates; place 2 chimichangas on top + sprinkle 1-2 tbsp blue cheese over each-Warning: this recipe steals the spotlight.
