Cook time: 15 minutes
Preheat oven to 425° F + line a sheet pan with foil; slice all beets into quarters, mix with 1 tbsp oil + salt/pepper; add beets to one side of sheet pan
Pat fish dry, then add to empty part of sheet pan + drizzle with oil, salt + pep; bake 10-15 min until fish is firm, opaque + cooked through + beets are hot
Meanwhile, heat skillet over med-high + warm rice with 1 tbsp water for 2 min, stirring occasionally
Divide everything between plates + drizzle on dressing—nice job!
