Instructions
Cook time: 6 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Heat lightly oiled skillet over med-high; pat chicken breasts dry + sear 2 min per side until warmed through, then slice
Add spinach to a large bowl + toss with 4 tbsp dressing; divide to plates
Divide chicken + sliced avocado on top of salads; sprinkle on 1-2 tbsp cheese to eat; nicely done!
