Cook time: 20 minutes

Preheat oven to 450°; slice potatoes in half, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 15-18 min until tender

Heat 1 tbsp oil in skillet over med-high; pat shrimp dry + sauté with salt/pep 2-3 min until shrimp is pink, opaque + cooked through

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

For butter sauce, remove protein from skillet; turn heat to low, then add butter and cook until starting to bubble, add 2 tbsp capers + salt/pep then turn off heat

Toss shrimp with sauce then divide all to plates
