Cook time: 13 minutes
Heat a skillet over med-high; working in batches, heat 4 cauliflower sandwich thins 1 min per side or until warm; add to 2 plates
Heat lightly oiled skillet over med-high; pat chicken dry + sear 2 min per side until warmed through, then add to sandwich thins
Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep for 4-5 min until soft + starting to brown
Top each sandwich with pepper mix + any tasty extras you like—yuuum
