Microwave sweet potato in wrapper on high 6-8 min (caution, that's a hot potato!); carefully cut in half + add to a plate

Remove bay leaf from pork, then chop ½ the pork into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp

Heat 1 tbsp oil in skillet over med-high + cook Superblend with salt/pep 5 min until tender

Top potatoes with pork + Superblend, then dollop on avocado spread
